Steak Mushroom Onions Kabobs Grilling

Don’t you dare make fun of my Pampered Chef kabobs!  They are extremely functional and they were a gift, so just focus on the delicious fresh organic mushrooms and yellow and purple onions instead.

I counted my onions and mushrooms carefully, and then cut my steak into an appropriate number of pieces so that I could have one mushroom, one steak bite, and at least one onion in every delicious bite.

I also only actually ate half of that NY steak… I’m saving the other half for something else tomorrow… maybe steak and eggs for breakfast.  I’ll need plenty of brain fuel tomorrow since I’ve put off finishing my taxes until literally the day before they’re due.  You people with your W2s have it so stinkin’ easy!

Ranch

Are you seeing this gorgeous creamy ranch dressing?  I homemade it!  It has paleo mayo, Greek yogurt (I break the dairy rules for Greek yogurt!), lemon juice, a splash of white wine vinegar, onion powder, garlic powder, sea salt, ground pepper, dried parsley, and dried dill in it.  I just dumped them all together and crossed my fingers to make it earlier today, but stay tuned.  I will make it again soon and maybe actually measure some stuff so that I can post the recipe here for you all to enjoy too!

Paleo Sliders Big Dinner Plate

Last week sometime, I tried making a full-size eggplant burger bun for my 60z grassfed steakburger.  It worked out pretty well.  Today, we went to the grocery store again and found that they only had normal sized eggplants… which were perfect for homemade sliders!

I loved getting to eat two neat little burgers that stayed together so nicely!  Some lettuce, a little onion, one tomato slice, and some spicy mustard per burger is all you need to kick White Castle to the curb.  If you ever even went there to begin with.  I sure as hell didn’t.  😛

If you’re wondering what else is on my dinner plate besides the sliders, I’ve also got a whole grilled jalapeno, half of a cajun style andouille (fancy name for a type of sausage) over sauerkraut, and some grilled asparagus.  My griller man did a supurb job manning the flames today!

It’s springtime, and Ultimate Evolved Campfire is your Backyard Grill, so get out there and fire it up Paleolithic-Style!  Food always tastes better when it’s real and when it’s cooked outside in the fresh air.

Ooooooh yeah baby!  This as an awesome meal that everybody, not just paleo people, will enjoy.  Grilled stuffed Anaheim peppers served over spicy grilled zucchini.  All you need per person for this recipe is two decent sized Anaheim peppers, one zucchini, toppings of choice (guac, salsa, etc), and some leftover meat and spices for the filling.

The filling can be whatever already cooked leftover meat you have laying around – beef, chicken, ground turkey, whatever.  I used chicken.  Add some onions (give the onion a couple minutes in a pan on the stovetop if you don’t want it to be too strong), a can of diced green chilis, chopped jalapenos, chopped mushrooms, and whatever else you have laying around that sounds Mexican-y.  Season with some tomato paste, a splash of coconut milk, oregano, cumin seed, and chili powder.  Just make sure all the ingredients in your filling are already cooked the way you like them, because grilling will only heat them up – not cook them.

If you insert at least two toothpicks per pepper at an angle like this, it will do a pretty good job of holding the lids on.

I cut each zucchini into four slices.  A little oil, and then more seasoning!  I season the crap out of everything.  Cayenne pepper, cumin, and chili powder on one side, and oregano, salt, garlic powder, and pepper on the other side.

Om nom nom.  Grilling tastes so much better than oven roasting.  When I have a yard someday, I can’t wait to step up into the occasional real campfire cooking too!

Before when I’ve grilled anaheim peppers, I’ve always pre-roasted them and spent a bunch of time peeling the skin off, and then re-grilling them with the stuffing inside.  Well screw that.  This time, I figured I’d just see how bad the skin really was.  And it’s not.  It’s a tiny bit tough, but not nearly as bad as I was expecting.  Entirely edible.  And definitely worth the time saved when you have a full day and not a ton of time for cooking prep.
